Grinding: the default, and usually correct
Priced per inch of stump diameter at grade with a minimum charge, finished in an hour or two, and it leaves the site essentially intact. The roots stay and decay over years, which matters only if something structural is going above them. Price yours in the grinding calculator.

Grubbing: when the ground has to be sound
Full excavation costs several times more because it is a different machine, a spoil heap, a backfill and usually turf repair. You buy it for one reason: something is going over that spot that cannot tolerate a decaying root plate settling underneath — a patio, a driveway, a foundation, a retaining wall.
It is also the honest answer where a large stump sits exactly where a new large tree must go, although grinding deep plus generous backfill often does that job for less.
Which one, in four questions

- Is anything structural going over the spot? Yes → grubbing.
- Is a new tree going in the same hole? Probably grubbing, or grind to 18 in.
- Is it lawn or bed? Grinding, 6 to 10 inches.
- Is the removal still to happen? Buy the grind on that same visit.
